Machaca
May 2, 2026 — Day 39
Lone Rock Beach Campground, Glen Canyon Recreation Area, Big Water, UT
Today was a slow do nothing day. This is one of the advantages of being on the road for so long, and staying in one place for an extended period. You can just take a vacation day now and then. (susan here: “taking a vacation from your vacation”—Yes, I know it sounds funny but you can actually have too much adventure!)
The only thing we really did was head into Arizona. It sounds far but we are just across the border. We were heading for the Pilot Gas station. As it turns out is Pilot for diesel only and it’s Big Eagle for gasoline. We’d been seeing a sign for the taco joint there so why not go and try Beaver Taco!
After our gas station pizza fiasco you would think we wouldn’t eat gas station food again. But this was different because it had great reviews.
Paul ordered Machaca, a beef and egg item. It was fantastic.

Susan here, I can’t remember and I didn’t take a picture of it. It was probably chili verde which is pork in a tomatillo sauce, quite tasty but not hot. I only got a picture of the largest tortilla wrap I’ve ever seen! It was easily 15-16″ across. One half of that filled was a huge meal. For reference, that’s one of those small condiment containers, maybe 2″ across.
